Pizza ovens
The key to every pizzeria is a good pizza oven with the optimal temperature for baking. In the foodservice industry, electric pizza ovens are primarily used, as they excel in speed and consistency during the baking process. Gas pizza ovens, on the other hand, are commonly found in mobile settings such as snack bars or food trucks. The classic wood-fired stone oven is often preferred by gourmet enthusiasts and in private settings.
Regardless of the type of pizza oven, relatively hot exhaust gases with temperatures of up to 400°C are generated during the baking process, which must be vented to the outside through an appropriate exhaust system. The fats contained in the exhaust and the high moisture content increase the fire risk in the exhaust pipe over time, making regular maintenance essential.
For cleaning, professional companies use chemical cleaners, so tightness is a fundamental requirement when selecting the right exhaust system. Due to the high exhaust temperatures, exhaust systems with conventional seals, such as silicone, are not a good choice.
